Breakfast Casserole

Christine made this a while back. After making it twice, we think you should add at least another 30-45 minutes to the bake time. We took it out after the top was starting to brown slightly.

Superfood Salad
The orange in this gave some bites a kapow! of citrus flavor. Very crunchy texture due to the pomegranate seeds, with the avacode adding a rich taste. Overall, I liked it.

Tofu Nuggets
Sweet Potato Skewers
Aioli Dip

Christine made a raspberry sauce that went well with the tofu nuggets. The coconut on the tofu was pretty hard to taste, and the raspberry added a nice sweet accent. The aioli dip had a strong flavor that went great with the potatoes.
