I'm actually back at work-work today. It feels good to be productive again. When I looked back at my calendar I realized that our family has not been on a regular schedule for over a month. It will be good to get back into more of a routine!
I also get to go back to the Farmer's Market today and I'm really looking forward to it. Hopefully we will actually get some veggies 'cause I'm ready to cook!
Here's a recap of what I've made lately:
Biscuits and Gravy, with sliced tomatoes on the side
Yummy, filling, and EASY.
I used some biscuits I had sitting in the fridge... I know biscuits are easy to make, but I just wasn't in the mood to dirty more dishes. Gravy from this easy gravy recipe, but used the full pound of (CSA) sausage instead of 1/2 pound. I also added some fresh basil in the mix. The tomatoes are just sliced with a tiny bit of salt.
Lamb and Veggie Kabobs with Orange Marinade
Looked prettier than they tasted.
We used up so many veggies, used some lamb from our CSA shares, I made up a marinade from scratch, Micah spent a lot of time grilling them... and these just tasted ok. I'm really glad we made the attempt, because we have never done kabobs before, but these are going to take some tweaking.
Mexican Night for a crowd
Nice way to feed ten people with different tastes...
Nothing too fancy here... just a Mexican spread for a bunch of people. I was going to make guacamole, but the avocados at the store were no good.
Breakfast Casserole
This thing was DEVOURED.
Oops! Didn't get a fancy picture before we ate it! Shame on me. Anyway, this thing was a hit. My stepmother and stepsister really liked it, and talked about other variations like adding green pepper. We served it next to a jar of jalapenos, and several people added jalapeno to their casserole.
My Sister-in-Law, Sarah, shared this recipe with me. Good thing I steal all of her recipes, they're the ones that get me compliments. ;)
Breakfast Casserole
The amounts can easily be varied!
Combine in an 8x11 casserole dish and bake at 350 for 30 minutes or bubbly.
- 1 medium sweet onion, chopped and sauteed
- 1 lb of browned sausage
- 9 eggs, lightly beaten
- 26 oz frozen shredded hash browns, thawed
- 3 cups shredded sharp cheddar
- 1 1/2 cups cottage cheese
Creamy Cremini on Rotini
Okay, maybe the original name was Rotini with Mushrooms
This was my second time making this pasta dish and it was just good. I love the sundried tomatoes and love the color when I buy the three-color rotini. I think next time I would increase the sauce-pasta ratio, but this was great!
