I haven't cooked as much in the last few weeks. We have eaten out and eaten easy-peasy things instead of having elaborate meals... I guess work is catching up to me.
In honor of our eating out, here's a picture from our favorite pizzeria, Tomato Jake's.
A couple of weeks ago we had this Kale-Potato-Leek soup.
The ingredients were simple and used up the veggies in the fridge.
The result was hearty and comforting.
I'll admit to thinking following a recipe for a sandwich is dorky, but these were SOOOOO worth it.
I loved these veggie sandwiches so fully, so completely. They were perfect when I followed the recipe exactly. My only note is that I loved this sandwich on a really hearty bread (think baguette) and was not quite as enthralled with it when I used normal wheat bread.
Micah says he likes actual snickerdoodle cookies better, but these were definitely good! Our friend Anish raved.
Yum yum yum. I took these when we went to an outdoor movie. I also made "peach cobblers" with them: A serving of snickerdoodle bar, a scoop of fresh peach jam, and some vanilla ice cream.
I had fun experimenting.
This was good. I will be the first to admit, it did taste a little "healthy." I think this might be improved next time by adding more pumpkin. Or maybe just adding more syrup. :)

I like this recipe. The garnishes are an absolute must. (Green onions, sprouts, peanuts, limes)
Take and bake pizza with pizazz
My hubby knows how to dress a pizza!
This is my story. I saw a great big take and bake cheese pizza at the grocery on sale for $6. I brought it home and said to Micah, hey, could you throw some tomato and basil on this maybe? Then I wandered off went to work. When I returned, he had made this masterpiece with four options: Cheese for Charlie, Tomato Basil at my suggestion, Turkey pepperoni Basil, and Mexican. All of that from bits of things in the fridge. It was great!
A beautiful disappointment.
Micah and I thought this thing was so pretty. We really really wanted to like it. But it was like a dry, dull coffee cake. And I like coffee cake. We actually pitched most of it. That's saying something.
Homemade gnocchi with asparagus
My most elaborate meal lately. I was pleased with the results.
The gnocchi came from the Joy of Cooking's potato gnocchi recipe. I then made a simple 'sauce' of sage, butter, mushrooms, spinach, and pine nuts. I mixed in the gnocchi with the sauce and added freshly grated parmigiano. Asparagus was steamed with olive oil, lemon, salt and pepper.
Individual flourless molten chocolate cakes
Rich.
These were SOOOO rich. I used the recipe from Joy of Cooking and purchased my favorite chocolate chips for the job- Ghirardelli bittersweet chocolate. The cakes seemed so small- only about half the size of a cupcake, but were so rich that that serving was plenty. Served with a small scoop of vanilla ice cream.

Phew! Now that I've typed all of that out I feel like less of a slacker. Now if I only could muster the motivation to make that squash that has been sitting on my counter...
