So, this week I want to take us back to basics a little. In recent weeks we have been eating a lot more meat. I'd like to decrease our meat consumption and up our veggie consumption. Healthier and yummy! (After writing this I added fish to the menu. It has been several weeks since we've had fish, so I'm looking forward to some salmon!)
Breakfast:
- Oatmeal
- Breakfast Sandwiches
- 7-grain hot cereal
- Leftovers
- Greek yogurt
Dinner:
- Baba Ghanoush with pita chips, salad with quinoa
- Breakfast for dinner: Lemon poppyseed pancakes, eggs to order, orange slices
- Baked salmon, baked acorn squash with pear and apple
Snacks/ Dessert:
- Cheese
- Grapes
- Pumpkin chocolate chip muffins with some healthier substitutions
- Cottage cheese
