This new year is off to a great start. My beautiful little girl is growing by leaps and bounds, and I promise to post with updates about her soon.
In the meantime, a little bit about our little family's life. When I get home from work, my husband fixes lunch for us most days. Lately he has been adding sprouts to our sandwiches, which increases the sandwiches' tastiness tenfold.
After lunch he heads off to work and Charlotte and I hang out. Lately I have been enjoying cooking. I feel so proud to make good food for my family. I am slowly building my repertoire of recipes. One of my resolutions for this year is to increase both the quantity and variety of vegetables in our diet. I began by making butternut squash soup:
This soup is so creamy and delicious, but amazingly healthy. When I made it the first time, it was my first time to cook with butternut squash. A word of wisdom- you want a really sharp knife to work with butternut squash. The skin is really tough, making the preptime longer than I expected.
This soup also had leeks in it, so I had my first leek experience. I have made the soup twice now, so I feel confident recommending this recipe. The parmesan garnish is a must-have: http://www.mykitchenaddiction.com/2009/10/butternut-squash-soup-with-parmesan-and-sage/
I substituted vegetable stock for the chicken stock, making it vegetarian.
Another day I made baked fish with couscous and stir-fried veggies. In the stir fry we had some of Micah and my favorites, like zucchini, onions, bamboo, water chestnuts, and baby corn.
The next day Micah suggested I take a break from making fancy food, so we just had boxed tomato soup with grilled cheese and salad. We had fancy salad fixings on hand, so we had mandarin oranges, walnuts, and raspberry vinaigrette dressing.
Finally, I didn't make this, but it made such an impression on me I had to post. This is an apple gorgonzola dessert pizza from the Carolina Brewery. I have had my fair share of dessert pizzas, but this thing was GREAT.
This has been a busy weekend, making chocolate chip cookies and shortbread from scratch for Micah as he works. I also made him lemon bars, but those were from a box. I have had that box in the back of that cabinet for forever (sssshhhh.... don't tell Micah). It's funny, but I almost felt like I was cheating, cooking from a box.
