This week I found a new favorite breakfast. I put bagels and cream cheese on my grocery shopping list, but ultimately decided that was too heavy. Instead I came up with a quick and easy breakfast that I love... and is also only 180 calories. Awesome!
Light Breakfast sandwich
Ingredients:
100-calorie English muffin
Light French Onion Skinny Cow Cheese Wedge
10 slices turkey pepperoni
Sprouts (or any other veggies!)
Toast the English muffin. Spread the cheese wedge on both sides of the muffin, add turkey pepperoni and any other toppings. Yum!

Last week I made meatloaf. In the past I have made the meatloaf from Pioneer Woman's website... you know the one, the one covered in bacon and brown sugary ketchup. Now don't get me wrong, that stuff is delicious. But I was looking for something a little lighter. After reading through a few recipes, this is what I came up with. I like my version because it includes veggies and is already portioned out for easy lunches.
This was the only picture I got... the one in a sea of peas from my busy lunch.
Mini-meatloafs
Ingredients:
1.2 lb extra lean ground beef
1 small onion, grated
1 carrot, grated
1 zucchini, grated
1/4 cup plain bread crumbs
1/2 cup ketchup
2 teaspoons black pepper
2 teaspoons ground red pepper (optional)
--
12 teaspooons ketchup
Directions:
Pre-heat oven to 350. Mix all ingredients but the last in a large bowl. Divide the mixture evenly into the 12 cups of a muffin pan. Top each individual meatloaf with 1 teaspoon ketchup. Bake for about 35 minutes.

For Valentine's Day Micah had stroganoff. We both really liked this recipe. Different than box stroganoff for sure. I like vegetarian fare as much as the next girl, but this hearty meal really hit the spot. You can find the recipe here. We followed it very closely, though we did end up making more noodles than it called for.
Leftovers for lunch the next day.

My other crockpot meal was the veggie and chickpea curry. I followed the recipe except I did not add the green pepper- we don't like green pepper very much. This was a very americanized version of Indian food, but we really liked it. I made brown basmati rice on the side.
Making Indian food has put ginger root on my grocery shopping list lately.

Last but not least, Micah's Valentine's Day surprise. I attempted to make him chocolate souffle. I say attempted because I took them out of the oven, marveling at how beautiful and puffy they looked. Then I turned away for a moment. When I looked back at my ramekins sitting on the oven, all of the sweet little souffles had fallen.
Oh well, they still tasted great! Next time I make chocolate souffle I will have to read more about how to not make them fall. If I remember. I don't plan to make chocolate souffle very frequently. :)
Despite their fallen state, these went quickly.
This was the last one, and arguably the least pretty of the lot.
Still, it gives you an idea of what they looked like.
