Most of last week's meals were a success. Thought I would share a few pictures of how they turned out:
This was good! At about 75 protein-packed calories each, these were a sweet little treat. This was definitely custard, though... it was a little eggy.
Seeping the red tea bags in the hot almond milk, the filled ramekins in their water bath, and the baked custards
"Homemade" pizza
Well, if you assign a value of 0 to frozen pizza, and a 10 to a completely homemade pizza, this was a 3. I bought the crust and the sauce. I shredded mozzarella, added provolone, mushrooms, turkey pepperoni, and spices. This pizza was just ok. I'm going to give myself a break, though. I was still sick and went ahead and made this for family movie night. Then we watched Narnia.Â
Palak Paneer, with homemade paneer:
Where do I begin? It was a several hour process last Sunday making the paneer.Â
Whole milk and totally adorable buttermilk, cheese curdles
cheese curdles draining, cheese curdles draining part 2
On Wednesday night I stubbornly dragged my sick self into the kitchen and finished the process. The paneer completely crumbled into the spinach mixture, rather than staying in nice, firm cubes. I was REALLY disappointed. Oh well, guess I can't make paneer like an Indian on the first try. The result was still tasty.
tons of spinach, crazy looking mix of foods, palak before the paneer
This was quite yummy. I baked the falafel instead of frying, so these were not as crisp as restaurant falafel. And yes, that's my big beautiful tomato!
beautiful onion, parsley, and garlic; mashing chickpeas; mixing
more mixing, the 8 patties the recipe called for (even though they were HUGE)
We ate this so quickly I didn't even get a picture of this on the plate.
Thought this was a fun idea: Take the rolled dough log and snip the dumplings into the boiling water using kitchen shears.
Delicious sauce: spinach, mushrooms, pine nuts; gnocchi in the sauce
I LOVED the gnocchi. I made the gnocchi dumplings too big (much larger than stated in the recipe), so I will fix that next time.Â

What a delicious week. I need to try my hand at making paneer! I love it, but since we rarely go out to eat (even at our favorite Indian restaurant), I should probably consider making it myself!
