I took a break this weekend long enough to make a meal. After eating more convenience food than I care to think about, it was so nice to eat a home-cooked meal! So I made pea soup and crockpot bread.

Recipes are after the break if you are interested.
The prep for this meal took all afternoon, but really wasn't very difficult. I just had to go back to the stove from time to time to add some ingredients or stir the soup. The soup and bread actually paired really well because they both took about three hours from start to finish. 

Pea soup 
The pea soup was a yummy variation of this one that I found on Allrecipes.com.

Ingredients:
1 tablespoon butter
2 small onions, chopped
1 bay leaf
3 cloves garlic, minced
2 cups dried split peas
4 cups vegetable stock
4 cups water
1 cup baby carrots, diced
3 potatoes, diced
1 teaspoon dried parsley
1 teaspoon dried basil 
1teaspoon dried thyme
1 teaspoon ground black pepper
1 teaspoon white ground pepper
1/2 teaspoon cayenne pepper
1 teaspoons salt

Directions: 
Sautee onions and bay leaf in the bottom of a large saucepan. When the onions are almost see-through, add the garlic and continue to stir until all the ingredients are fragrant.

Add the vegetable stock, water, and peas. Bring to a boil, then turn the heat down to low, cover, and simmer for two hours. Stir occasionally. 

Add the carrots and potatoes. Season to taste. (I think when I make this again I will cut back on the thyme and parsley.) Simmer for another hour, stirring occasionally. Remove the bayleaf. Serve into bowls and let stand for a few minutes- it will be hot. 

Crockpot bread
I got this recipe when Amy posted it on facebook. She got it from the Fix it and Forget it Cookbook. If you are interested, Amy blogs about baking at Cake Lore. 

Ingredients:
2 cups milk 
2 Tbsp olive oil
1/4 c honey or brown sugar (I wound up using brown sugar because I had no honey... I also added 2 tablespoons Maple Syrup.)
3/4 tsp salt
1 pkg yeast
2 1/2 c whole wheat flour
1 1/4 c all purpose flour

Directions: 
Heat milk on the stovetop- don't let it boil or scald. (110-115 degrees) Remove milk from stovetop and add yeast. Let yeast sit for 5-10 minutes, until foamy.

Combine dry ingredients. Add milk/yeast, brown sugar,  and oil. Mix well.

Place dough in a well-greased pan that will fit in your crock pot. (I used a 6" pan.) Cover with greased tin foil, let stand for 5 mins.

Place pan in crockpot and cook on high for 2.5 - 3 hours.

Remove pan and uncover. Let stand 5 minutes. Serve warm with butter.
